This stunning Japanese blade features an SG2 micro-carbide powder steel core that helps make it incredibly sharp. It has 100 outer layers of stainless steel that wrap the core creating the unique Damascus design.
This CRYODUR ice-hardened blade has a Rockwell hardness of 63, so you can be confident in the knife’s stability and resistance to corrosion.
This Miyabi 6.5” nakiri has also been hand-finished using the 3-step Honbazuke method. This traditional Japanese honing method delivers an extremely sharp and symmetrical cutting edge with an angle between 9.5 and 12 degrees.
The knife's striking handle is made from Karelian (Masur) birch wood, a prized material for knife handles. With its comfortable and ergonomic shape, this Miyabi knife feels just as good as it looks.
