This stunning Japanese blade features a Micro-Carbide MC66 powdered steel core giving it incredible sharpness and edge retention. It has 132 outer layers of steel that wrap the core creating the unique flower Damascus design visible on every blade.
This CRYODUR ice-hardened blade has a Rockwell hardness of 66, so you can be confident in the knife’s stability and resistance to corrosion.
The Miyabi 8” chef’s knife has also been hand-finished using the traditional 3-step Honbazuke method. This traditional Japanese honing method delivers an extremely sharp cutting edge with an angle between 9.5 and 12 degrees.
The traditional D-shaped handle is made from black ash wood and finished with an elegant mosaic pin and steel end cap. It provides you with a comfortable grip that allows for excellent control and tireless working.
