Equipped with 11 serrated blades, the CTX40 produces 4 mm (0.22") thick horizontal slices that retain the fruit’s juices, enhancing flavor and presentation. The horizontal slicing system also helps minimize mess and waste. Designed with operator safety as a priority, the slicer includes double protective housings and a locking mechanism on the carriage to keep blades safely enclosed during use.
The slicer’s sturdy stainless steel frame and HDPE sliding mechanism ensure consistent, smooth operation, while stabilizing suction cup feet hold the unit firmly in place. The elevated edge allows direct collection into a GN tray (up to 2.6" high), streamlining workflow. With a slicing speed of approximately 2.5 seconds per tomato—or 7.7 lbs per minute—the CTX40 is an essential tool for high-volume prep environments.
